Ingredients:
Amount Ingredient
1/3 cup light soy sauce
1/3 cup rice vinegar
3 tbl sesame oil
1 x -12.3 oz. package Mori-Nu Silken Tofu (Extra Firm), drained and cut into 1/2
inch cubes
1/2 cup carrots, chopped
1/2 cup celery, sliced
1/2 cup scallions, sliced
1/4 cup fresh ginger, sliced
Instructions:
Instructions: 1. Combine soy sauce, rice vinegar, sesame oil and tofu. Marinate in refrigerator for a minimum of 1 hour.

2. Heat all above ingredients in wok. Add carrots, celery, scallions and ginger. Stir fry until all vegetables are just crisp-tender.

3. Add rice. Stir fry to heat through. Serve hot.

Makes 5 servings of 1 cup each.
