Ingredients:

FOR THE KEBABS ----------------
125 gm Mushrooms, (4oz)
1 x Red pepper
1 x Green pepper
1 x Yellow pepper
1 x Red onion
250 gm Tofu, (8oz)
----------------- FOR THE MARINADE ----------------
3 tbl Dark soy sauce
2 tbl Medium dry sherry
2 tsp Dark brown soft sugar
1 x Clove garlic, crushed
Instructions:
Instructions: Clean the mushrooms and slice in half lengthways. Deseed the peppers and cut into 2. 5cm (1 inch) pieces. Peel the onion and cut into 8 pieces.

Cut the tofu into 2. 5cm (1 inch) pieces.

Mix the marinade ingredients together, add the tofu, toss well and leave to marinade for 20 minutes. Drain, reserving the marinade.

Thread the vegetable pieces and marinated tofu alternately onto skewers.

Place under a preheated moderate grill for 8-10 minutes, turning and basting with the reserved marinade occasionally.

Notes:
Alternately suitable for barbecues.

NOTES : Tasty kebabs suitable for a vegan diet which are quick and easy to make.
