Ingredients:
Amount Ingredient
1 tsp Butter
2 x Garlic clove, minced
1 tbl Shallot, chopped
3 x Tomatillos, diced
2 lrg Tomatoes, peeled, seeded, juice removed and diced
1 tsp Cognac or brandy
1 tbl Tarragon, fresh
Instructions:
Instructions: Saute garlic & shallots in butter till transparent. Add tomatillos & tomatoes, saute 5 minutes. Add cognac, tarragon, salt & pepper. Simmer 8 minutes. Serve over fish dishes.
