Instructions: This classic Italian recipe is one of the easiest and tastiest appetizers to make. You can make the individual bruschetta as described below, or you can serve the toasts with the mixture in a bowl and let your guests make their own.
In a medium non-reactive bowl, combine the tomatoes, two cloves minced garlic, olives and onion and toss together well. In a small bowl, whisk together the vinegar, olive oil and basil. Add to the tomato mixture and toss together well. Season to taste with salt and pepper. Slice the baguette into three-quarter-inch slices. Lightly brush the slices with olive oil and broil until crispy and golden brown on both sides, flipping once. Quickly spread the slices with the remaining garlic.
