1 can diced tomatoes - (15 1/2 oz) undrained
2 x garlic cloves pressed
1 sm onion minced
1/2 tsp salt
1/4 tsp dried crushed red pepper
1/3 cup fresh basil leaves chopped
1 pkt frozen mashed potatoes - (22 oz)
1/3 cup milk
Instructions:
Instructions: Bring first 5 ingredients to a boil in a small saucepan; reduce heat, and cook 10 to 12 minutes or until liquid has evaporated. Stir in basil.

Combine potatoes, milk, and butter in a 2-quart microwave-safe bowl. Microwave at HIGH 15 minutes, stirring once. Let stand 2 minutes.

Spoon potatoes into a large serving bowl, and spoon tomato mixture down center.

This recipe yields 6 servings.
