Ingredients:

1 tsp olive oil optional
1/4 cup sherry or apple juice
1/2 x onion minced
2 x cloves garlic minced
1/2 cup chopped red bell pepper
4 cup plum tomatoes fresh or canned
chopped
1 cup vegetable broth
1/2 cup orzo
Instructions:
Instructions: Saute onion, garlic & bell pepper in olive oil & sherry/apple juice till soft. Add tomatoes and veg. broth and bring to a boil. Simmer 7 minutes.

Add orzo and simmer another 10 minutes. Stir in basil before serving.

Makes 4 servings.

My notes: I made this over my lunch break and stuck it in the refrigerator

so I could just reheat it for dinner. The orzo soaked up
*a lot* of the liquid so I added another cup of veg. broth before reheating. I served it with a green salad. [Kelly]
