1 med cucumber, peeled, shredded and drained
3 tbl minced green bell pepper
8 slc oatmeal or whole-grain bread
1/2 cup Basil Garlic Butter (recipe follows)
8 x (1-ounce) slices Colby cheese
Instructions:
Instructions: Thinly sliced red onion, separated into rings (optional)

Combine cucumber and pepper; set aside. Spread one side of each slice of bread with about 1 tablespoon Basil Garlic Butter; layer 2 slices cheese, 2 slices tomato, about 3 tablespoons cucumber mixture and onion rings as desired.

Top with second slice of bread, cut in half and serve.

Basil Garlic Butter
1/2 cup softened butter (1 stick)

2 teaspoons chopped fresh basil, or 1/2 teaspoon dried basil 1/4 teaspoon garlic powder
1/8 teaspoon pepper

In a small bowl, combine butter, basil, garlic powder and pepper; beat well until fluffy. Store covered in refrigerator for up to 3 weeks.

Makes 1/2 cup.
