Instructions: In a 2- to 3-quart saucepan with a lid, heat olive oil until smoking. Add red onion, figs and pine nuts and cook until onion is soft and translucent, about 8 to 10 minutes. Add couscous, tomato sauce and chicken stock and bring to boil. Remove from heat and cover and let stand 10 minutes. Remove lid, fluff with fork, season with salt and pepper and serve.
