2 med tomatoes
4 oz flaked crabmeat (canned is fine)
3/4 cup shredded Monterey Jack cheese
5 x green onions sliced fine
salt to taste
10 x flour tortillas
Instructions:
Instructions: Dice the tomatoes fine and then drain them in a colander or strainer. While they drain, combine the crabmeat, onion and cheese. Gently stir in the tomato, season with salt. Place 5 of the tortillas on a greased baking sheet and top each with 1/5th of the crabmeat mixture. Top with the remaining 5 tortillas and bake in a preheated 450 oven to brown them lightly (7-9 minutes) and melt the cheese. Cut them into wedges and serve with the salsa on the side. Note- I have made these using shrimp and minced jalapeno pepper and they are awesome!

Rayna Says: Often serve these as an appetizer, but they serve well as a side dish too.
