Instructions: Heat the oil in a heavy pan.
Add the caraway seeds and peppercorns. Stir a few times. Then add the curry leaves and the rice. Reduce the heat and stir fry until the rice grains turn shiny. Drop in the tomatoes tomato puree and salt. Increase the heat mix well and pour in the hot water. Give it a good stir cover and cook on a low heat until the rice is fluffy and dry.
