Instructions: Place the tomatoes in a bowl with the garlic balsamic vinegar and olive oil.
Stir well. Add the shredded basil and mixed herbs to the tomato mixture. Stir in salt and pepper to taste. Mix thoroughly to combine well. Let stand for at least 30 minutes before using to allow the flavors to develop and mingle. Try this dressing with pasta rice and grain salads: with cheeses; or with gulled lamb chicken or fish.
