1/3 cup Cider vinegar
3 tbl Tomato paste
2 tbl Lime juice - (1 lime)
3/4 tsp Tabasco pepper sauce
1/2 tsp Chopped garlic
1/2 tsp Salt
1/2 cup Olive oil
1 med Tomato (abt 4 oz) blanched, skinned,
seeded, and diced
1 x Poblano chile roasted, seeded,
and diced
1/2 tsp Dried oregano
Instructions:
Instructions: In bowl of food processor, combine vinegar, tomato paste, lime juice, Tabasco pepper sauce, garlic and salt; process 30 seconds. With motor running, gradually add oil until mixture is emulsified.

Transfer dressing to medium bowl. Stir in tomato and chile pepper. Season with oregano and black pepper. Just before serving, season with additional salt and Tabasco sauce, if desired.

This recipe yields 2 1/2 cups.
