tomatoes seeded and diced
olive oil
vinegar
minced garlic
salt and pepper
fresh chopped basil
vermicelli
Instructions:
Instructions: Seed and dice some tomatoes, and combine in a bowl with a bit of olive oil, some vinegar (Ive used balsamic or red wine), a bunch of minced garlic, and salt and pepper. Let it sit for about 20-30mins, add some fresh chopped basil, and toss with vermicelli pasta and parmesan cheese.

Its unbelievable!!! You could also add olives or capers.

If you want more exact measurements, Ill try to be more specific. Its all just a matter of taste, though. I love the taste of vinegar, so I probably put more vinegar than others would.

NOTES : My absolute favourite way to use fresh tomatoes is in a pasta sauce where you dont cook them.
