Ingredients:
Amount Ingredient
1 x Shallot, minced
1 x Clove garlic, minced
1 tbl Olive oil
1/4 cup Dry white wine
1 lrg Tomato, finely chopped
2 tbl Chopped fresh or frozen chives
2 tbl Lemon juice
1/4 tsp Salt
1/8 tsp Pepper
Instructions:
Instructions: Cook shallot and garlic in oil in a large skillet over medium-high heat, stirring constantly, 1 minute. Add wine, and cook until reduced by half.

Stir in tomato, chopped chives, and next 3 ingredients. Spoon over salmon or other fish and serve immediately. Garnish if desired.

Makes about 1 cup.
