Ingredients:
Amount Ingredient
30 ml Olive oil
1 x Onion, chopped
1 x Clove garlic, crushed
675 gm Tomatoes, peeled and quartered
900 ml Vegetable stock
30 ml Tomato puree
100 gm Haricot beans, (soaked overnight)
2 tbl Chopped fresh mint
Salt & freshly ground black pepper
Instructions:
Instructions: 1. Heat the oil, add the onion and saute, then add the garlic and continue cooking for 3 minutes.

2. Add the tomatoes, stock, tomato puree together with the drained beans.

Bring to the boil and simmer for an hour or until beans are tender.

3. Add mint and seasoning and serve garnished with mint leaves.
