Amount	Ingredient
4 lrg	Ripe tomatoes, peeled, seeded and diced
4 x	Red peppers, roasted, peeled, seeded and diced
1 x	Cucumber, peeled, seeded and diced
1 tsp	Chilli peppers, seeded and chopped
1 tbl	Lemon juice
2 tbl	Extra virgin olive oil, (2 to 3)
2 tbl	Flat leaf parsley, chopped
1/4 tsp	Ground cumin

Instructions:

Instructions: Combine all ingredients in a mixing bowl and toss them together.

Refrigerate for at least an hour before serving.
