Ingredients:

3 x Ripe extra large tomatoes
400 gm Mozzarella cheese, (13oz)
A large sprig of fresh basil, shredded
2 tbl Extra-virgin olive oil
Instructions:
Instructions: 1. Cut the tomatoes and mozzarella into fairly thick slices and arrange them alternately on a large plate.

2. Scatter the basil over the top, sprinkle with salt and drizzle with the olive oil.

3. Serve immediately.

NOTES : This patriotic salad (the vivid colours of red, white and green representing the Italian flag) is perhaps the simplest and best way to savour the pure natural taste of mozzarella. It can also be served with other salads or vegetable dishes that do not contain cheese.
