Instructions: Preheat oven to 180C (350 F).
Cook rice in boiling salted water until tender. Dice onion and capsicum. Slice the top of each tomato and set aside the tops. Scoop out tomato flesh and chop. Reserve tomato cases. Cook onion, capsicum and garlic gently in olive oil for 5 minutes without colour. Combine with all remaining ingredients and mix well. Drain off excess liquid and spoon mixture into tomato cases. Put tomato tops back and place on non-stick baking tray. Bake for 15 minutes and serve. Email this Recipe:
