Instructions: For dressing: Place all ingredients except salt (cottage cheese through black pepper) in a blender or food processor and process until smooth. Taste and add salt if desired. Chill before serving. Dressing may be refrigerated for up to 2 weeks.
For salad: Toss lettuce with dressing and cheese. Sprinkle with cracked black pepper. Divide salad onto 4 chilled plates and garnish each with a teaspoon of scallions. Add croutons if desired. Email this Recipe:
