Instructions: Bring a large pot of water to a boil and cook the tortellini until tender but not mushy. Meanwhile, melt the butter in a medium skillet, add the scallions and tomatoes, and saute 2 minutes, or until the vegetables are hot throughout. Set aside. In a small bowl mix together the sour cream, Parmesan cheese, salt and pepper. Drain the tortellini thoroughly, then return it to the pot. Pour on the sour cream mixture and toss quickly to coat. Spoon the tortellini onto serving plates, and spoon some of the tomato mixture in the center of each serving.
