Ingredients:
Amount Ingredient
1 x chicken carcass or 1 litre chicken stock
400 gm tin chopped tomatoes
1/2 x onion peeled and chopped
1 x red pepper diced
200 gm tin of sweetcom drained
1 x handf cooked chicken meat
1 x level tsp ground cumin
1 x level tsp chilli powder
Instructions:
Instructions: If using a chicken carcass place in a saucepan with 1200ml water.

Bring to the boil simmer for 20 minutes then drain.

Make the liquid up to 1 litre with hot water (if using stock place in the pan bring to the boil).

Add the tomatoes onion and pepper cook over a medium heat for 10 minutes then add the sweetcom chicken and spices.

Cook for 10 minutes then season to taste.

Place 6 tortilla chips in the base of each soup bowl and ladle in the soup.

For the cooked chicken remove any remaining meat from the carcass or buy readycooked meat.

Serves 4
