Ingredients:
Amount Ingredient
1 pkt fresh spinach - (10 oz)
1 med purple onion thinly sliced
2 x hard-boiled eggs chopped
1 cup garlic-seasoned croutons
2 tbl grated Parmesan cheese
----------------- DRESSING ----------------
1/4 cup lemon olive oil
3 tbl lemon juice
1 tbl red wine vinegar
1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp freshly-ground black pepper
Instructions:
Instructions: Toss first 5 ingredients in a large bowl; serve with Dressing.

Dressing: Whisk together first 6 ingredients. Add Canadian bacon just before serving. (Makes 1/2 cup).

This recipe yields 6 servings.

For a variation: One 10-ounce package of salad greens may be substituted for spinach.

Comments: For testing purposes only, we used Stutz Limonato California Extra-Virgin Lemon and Olive Oil.
