Instructions: Wash 5 pint jars. Keep hot until needed. Prepare lids as manufacturer directs.
Combine corn, onions, green and red bell peppers, celery seeds, brown sugar, corn syrup, salt, mustard and vinegar in a large pot (see note). Cover, and bring to a boil, then simmer for 15 minutes, stirring occasionally. Ladle the relish into 1 hot jar at a time, leaving 1/2 inch head space. Wipe jar rim with a clean damp cloth. Attach lid. Fill and close remaining jars. Process in a boiling water canner for 15 minutes (20 minutes at 1,001 to 3,000 feet; 25 minutes at 3,001 to 6,000 feet; 30 minutes above 6,000 feet). Note: Do not use aluminum or iron cookware for this recipe. The acids in the ingredients could react with the metal, giving the food an off-taste. Email this Recipe:
