Ingredients:
Amount Ingredient
375 gm Black Eye Beans,soaked
2 tbl Olive oil
1 lrg Onion, chopped
2 stalk celery,including leaves, sliced
2 x Carrots, sliced
2 x Tomatoes, peeled, chopped
1 tbl Tomato paste
2 tsp Sugar
1/2 tsp Minced garlic
1 tsp Basil leaves
6 cup Water
Instructions:
Instructions: In a large pan, heat the olive oil, and lightly fry the onion, celery and carrots for 5 minutes. Add tomatoes, soaked beans, tomato paste, sugar, garlic, basil, salt, pepper and water. Bring to the boil and simmer covered for 1 hour or until the beans are tender. Check seasonings before serving.
