1/4 cup all-purpose flour
1 cup granola cereal
3/4 cup firmly packed light brown sugar
1/2 cup semisweet chocolate chips
1/2 cup dry-roasted peanuts (about 2 ounces)
1/2 cup dark raisins
1/2 cup chopped dried apricots
2 tsp baking powder
1/2 tsp salt
3/4 cup milk
1/2 cup vegetable oil
1 lrg egg

15-20 mins. baking

Preheat oven to 375. Spray 12 standard size muffin cups with Pam.

Mix together flour, cereal, brown sugar, chocolate chips, nuts, raisins, apricots, baking powder and salt.

Mix together milk, oil, egg, and vanilla.

Make a well in the center of the flour mixture. Add milk mixture all at once to well, tossing with a fork until dry ingedients are just moistened. (Do not overmix.) Spoon batter into prepared pan, filling cups 3/4 full.

Bake muffins until tops are firm and golden, 15-20 mins. Transfer pan to wire rack to cool slightly. Turn muffins our onto rack to cool completely.
