Ingredients:

6 tbl Olive Oil
2 lb Chuck Pot Roast, trimmed and cut into 1" cubes
1 tsp Garlic Powder
2 tsp Ground Cumin
2 lrg Onions, each cut into 8 pieces
5 cup Beef Stock
3 cup Water
4 lrg Cloves Garlic, minced
9 x Red Potatoes, halved
4 x Ears Corn, each cut into 4 pieces
3 x Carrots, peeled and cut into 1" chunks
2 med Zucchini, cut into 1" pieces
1/2 cup Cilantro, coarsely chopped
1 tsp Salt
Instructions:
Instructions: Heat 3 tb of the oil in a large skillet. Add meat, garlic powder and cumin; stir-fry until meat is well browned. Remove with a slotted spoon to an 8 quart stock pot.

Heat remaining 3 tb oil in th pan; add onion and saute until soft. Transfer to the pot. Add remaining ingredients, bring to a boil. Cover, reduce heat and simmer 1 hour or longer. Serve with flour tortillas or cornbread.
