Amount Ingredient
1 tbl olive oil
1 x green bell pepper, seeded, deribbed cut into strips
1 x red bell pepper, seeded, deribbed cut into strips
1 x yellow bell pepper, seeded, deribbed cut into strips
1 sm shallot, peeled finely chopped
2 tbl dry white wine
1 tsp fresh marjoram finely chopped or 1/2 teaspoon dried marjoram
1/4 tsp salt
1/8 tsp white pepper
Instructions:
Instructions: 1. In a saute or frying pan over medium heat, warm the olive oil. Add the green, red and yellow peppers and saute, stirring, until they just begin to soften, 2-3 minutes.

2. Add the shallot, wine, marjoram, salt and pepper. Reduce the heat slightly and simmer, uncovered, until the peppers are just tender, 3-4 minutes, stirring once halfway through. Remove from the heat and stir in the chives.

3. To serve, mound in a serving bowl.
