Ingredients:

400 gm large raw prawns peeled and cleaned
1 tbl angostura bitters
1 x juice of 1lime
1/4 tsp chilli powder
1/4 tsp ground cinnamon
1 x tiny grating of nutmeg
1 lrg clv garlic peeled and crushed
1 tbl sunflower oil
Instructions:
Instructions: Wash and dry the prawns and place in a bowl.

Mix the next 6 ingredients with some salt and pepper then pour over the prawns.

Cover and leave for 30 minutes at room temperature or about an hour in the fiidge turning once.

Heat the oil in a frying pan until very hot then tip in the prawns and liquid.

Fry for about 3 minutes until done.

Serve on warm plates with the pan juices and some rice or bread.

Leave the tails of the prawns intact if you like which makes it easier if you are eating them with your fmgers.
