Instructions: Wash and dry the tripe then cut it into pieces about 7.5 cm (3 in) square.
Put the tripe and onions milk 430 ml (3/4 pt) water and seasoning into an enamel or stainless steel pan (this helps to keep the tripes colour) and bring to the boil. Melt the butter in a saucepan stir in the flour and whisk in the tripe liquid. Stirring continuously bring the sauce to the boil and cook for 1 to 2 minutes. Add the tripe and onions and serve when heated through. Sprinkle with chopped parsley and serve with mashed potatoes. Serves 4 Email this Recipe:
