Instructions: Oil baking dish with the 2 tablespoons of oil. Wash the trout, season with salt and pepper and place in baking dish. Pour the wine over it and bake in a 450-degree oven for 7 to 10 minutes, or until the flesh is opaque and flakes easily with a fork.
To make sauce: In a food processor, finely chop parsley, capers, cornichons and anchovies, and blend with olive oil, lemon juice, salt and pepper. Thin, if you like, with a few tablespoons of the cooking wine. Serve the fish hot with the sauce. Roden Email this Recipe:
