Ingredients:

4 x trout
100 gm butter
1 x onions, medium
4 slc bacon
1 tbl lemon juice
2 tsp fresh herbs (chopped)
Instructions:
Instructions: Generously butter a large casserole dish, lay fish on top.

Finely slice onion. Dice bacon.

Melt butter in pan, add onion, and bacon cook gently 2-3 minutes until bacon just starts to colour, remove from heat and toss through herbs.

Spoon bacon, onion and juices over each fish, squeeze over lemon juice and season well.

Place on lid, cook in preheated oven 200C/400F 10-15 minutes or until fish is cooked through.

Serve with buttered boiled potatoes and squash.
