Instructions: Trim the tail and cut off the fins of each trout using kitchen scissors.
Coat in seasoned flour dusting off the excess. Heat the butter and oil in a large frying pan. Carefully add the trout two at a time and fry for 6 to 8 minutes turning halfway through the cooking time. Drain the fish and sprinkle with lemon juice. Keep warm. Add the almonds to the pan and cook for 1 to 2 minutes stirring until golden. Stir in a little seasoning and the herbs. Serve immediately. Note: the flaked almonds can be replaced by an equai quantity of coarsely chopped hazelnuts or whole pine nuts. Serves 4 Email this Recipe:
