Instructions: Saute minced celery in olive oil. Melt anchovies; add seasoned bread crumbs. Simmer until almost dry. Add grated Romano cheese. This is the Elmere dressing. Salt and pepper trout filet. Spread Elmere dressing on trout; roll. Broil in lemon butter sauce, adding minced tomato.
