Instructions: Cut squash up and boil until tender. Drain. In bowl, mix squash, onions, sour cream, soup, cheese and seasonings. Melt one stick of butter in a large casserole dish. Break up Ritz crackers real fine. Place crumbs on top of butter until they cover bottom of dish. Spread squash mixture evenly over crackers. Top with remaining cracker crumbs & remaining melted butter. Bake 350 for 45 minutes to one hour.
