Ingredients:

1 lt chicken stock (qv)
570 ml double cream
2 tbl white truffle paste
2 x black truffles grated
1 x salt and pepper
Instructions:
Instructions: Reduce the stock to 100ml.

Add the cream and bring to the boil.

Remove from the heat and add the truffle paste grated truffles salt pepper and lemon juice.

Serves 4
