Instructions: Put the Maionese into an electric blender add the remaining ingredients and work until smooth.

If necessary thin to a coating consistency by adding a little cold water.

Altematively rub the undrained tuna fish and the anchovies through a sieve into a bowl.

Add the egg yolks and proceed as for Maionese (qv).

Use to coat hardboiled eggs sliced cold chicken turkey or veal or to stuff tomatoes.

Makes about 300ml.
