Instructions: Add tuna fish to egg mixture. In omelet skillet, heat oil until it is hot. Make omelet as in "Basic French Omelet."

Comments: In this recipe the omelet is usually made with oil instead of butter.

Suggested Wine: A chilled dry white wine: Alsatian Riesling; etc.
