Instructions: While the rice is cooking make the dressing.
Halve and deseed the whole tomatoes then grate against the coarse holes of the grater. Sieve the mush creatinga runny tomato coulis. Process the mayonnaise with the ketchup tuna salt and pepper and enough of the tomato coulis to make a sauce with the consistency of double cream. Taste and adjust seasoning Mix the cooked rice with the dressing chopped eggs and parsley. Shortly before serving scoop into a dish smooth the surface and lay the sliced tomatoes over the top.
