200 gm tin of tuna drained
50 gm tin of anchovies in olive oil
2 x heaped tsp taperlade
1 x juice of 1 lemon
10 x basil leaves torn
1 tbl capers drained (optional)
olive oil
2 lrg clv garlic peeled
50 gm fresh breadcrumbs
1 tbl fresh parsley chopped
Instructions:
Instructions: Place the drained tuna with anchovies and anchovy oil in a food processor.

Add tapenade lemon juice basil capers and 1 tbsp olive oil.

Process until combined then season with pepper.

Heat 2 tbsp olive oil in a frying pan and add the garlic.

Stir in the breadcrumbs and fry for 810 minutes util golden brown and crunchy.

Remove the garlic cloves.

Stir in the parsley.

Cook the pasta drain then toss in a warmed serving dish with the tuna sauce.

Sprinkle over the breadcrumbs and serve.

If you have parsley and basil to hand they will add colour and freshness.

Serves 6
