1/2 med onion, finely diced
1 x rib celery, finely diced
1 tsp butter
1/4 cup heavy cream
1 x egg
3 oz cream cheese, cut in small pieces
salt, pepper and garlic powder to taste
2 can (6 oz. each) tuna, drained of liquid
1 can (14.5 oz.) French-cut green beans, drained
1/4 cup pork rind crumbs
Instructions:
Instructions: In a large skillet, over medium heat, saute onion and celery in butter until vegetables are crisp-tender.

Meanwhile, beat cream, egg and seasonings together thoroughly. Pour cream mixture into skillet with vegetables, and add cream cheese. Heat, stirring, until cream cheese is melted into cream sauce, and the mixture thickens and begins to bubble. Add tuna and green beans. Stir until well-mixed.

Pour mixture into a lightly greased casserole. Sprinkle pork rind crumbs and Parmesan cheese over the top.

Bake at 350 degrees for about 30 minutes until heated through and topping has browned slightly.
