Instructions: Soak beans overnight in cold water.
Drain the beans, place in a pan, cover with cold water and bring to the boil, simmer for 1 hour or until tender. Drain well and leave to cool. Hard boil eggs, 10 minutes. Dice onions. Cut each tomato in 8 pieces and place in a bowl with the beans, olives, onions and parsley. Flake the tuna into large pieces and add to the salad. Pour over the dressing and toss well. Line a salad bowl with lettuce leaves and arrange salad in center. Decorate with sliced egg and capers. Dressing: Put all ingredients in a screw topped jar and shake well to blend before using.
