Ingredients:

500 gm pasta, shell
20 gm butter
1 tbl olive oil
2 clv garlic, crushed
450 gm tuna, flaked
4 x spring onions
1 x red capsicum
200 gm mushrooms
1/4 cup white wine
1/2 cup cream
2 x egg yolks
1 tsp parsley, chopped
Instructions:
Instructions: Cook pasta in boiling salted water until tender. Drain well.

Dice capsicum. Slice mushrooms and spring onions.

Heat butter and oil in a pan, add garlic, spring onions, capsicum, and sliced mushrooms and saute for 3 minutes. Add white wine and cook for 3 minutes stirring constantly until mushrooms are tender and liquid is reduced. Stir in cream and drained tuna, bring to the boil, simmer 2 minutes to reduce slightly. Remove from heat and stir in egg yolks to slightly thicken. Add herbs and season.

Pour sauce over pasta and finish with grated parmesan cheese.
