Ingredients:
Amount Ingredient
2 tbl Butter or bacon fat
3/4 cup Rice
1/2 cup Chopped green pepper
1/2 cup Chopped onion
1 x Garlic clove
1 can VEG-ALL Mixed Vegetables (16 oz)
1 can Stewed tomatoes (16 oz)
1 can Chicken broth (12 oz)
1 can Tuna, flaked (12.5 oz)
Instructions:
Instructions: 1. Heat fat in skillet. Add rice, green pepper, onion and garlic; cook 5 minutes.

2. Drain VEG-ALL.

3. Combine rice with stewed tomatoes and chicken broth. Bring to boil, cover and simmer until rice is cooked, about 25 minutes.

4. Stir in tuna and vegetables; sprinkle cheese over top. Heatt until cheese is melted.
