Combine all ingredients in a jar and shake well until well combined. Season well. Set aside. Cook rice in a large pot of boiling salted water until tender, about 30 minutes. Rinse under cold running water and allow to drain well. Slice spring onions. Dice celery and capsicum. Peel core and dice apples. Flake tuna into pieces, combine with rice and remaining salad ingredients, add dressing and mix well. Serves 4. Email this Recipe:
