1/2 tsp olive oil
1/2 cup celery sliced
1/2 cup onions chopped
1/2 cup red and green bell peppers chopped
2 cup turkey light meat, skinless cooked and cubed
1 cup ketchup
3 tbl white vinegar
2 tbl brown sugar packed
1/2 tsp dry mustard
Instructions:
Instructions: In a skillet, heat oil over medium heat. Add celery, onions, and bell peppers. Cook until lightly browned. Add turkey, ketchup, vinegar, brown sugar, and mustard. Reduce heat to low and simmer 15 minutes. Spoon turkey barbecue on the bottom halves of the buns. Cover with top halves and serve.

Serving Ideas : Serve with green beans & potato salad.

NOTES : These turned out very well! The Butterball cookbook where I found this
recipe is worth the money. It offers 150 recipes which include soups,
sauces, salads, and recipes for turkey breasts. Ive made a few recipes from it that were just as good.
