4 x carrots, diced
2 x celery stalks, sliced
1 lrg onion, chopped
1/2 oz canned tomatoes, drain & chop
1/2 cup uncooked barley
1 tbl Worcestershire sauce
1/2 tsp salt
1 tsp dried parsley flakes
1 tsp dried basil
1 x bay leaf
1/4 tsp pepper
1/4 tsp paprika
1/4 tsp poultry seasoning
Instructions:
Instructions: Place turkey carcass in a large pot with 4 quarts of water. Bring to boil, reduce heat and simmer 2 hours. Remove carcass from broth and pick meat from bones. Return meat to broth and add rest of ingredients.

Simmer about 1 hour, or until vegetables are tender. Remove bay leaf.

Yields 5 quarts
