Ingredients:

1 x 425g tin of coconut milk
1 tbl comflour
2 tbl soy sauce
4 tbl hoisin sauce
1 x 227g tin of water chestnuts drained and halved
4 x spring onions sliced on the diagonal (keep the white and green parts separate)
1 x 50mm piece of fresh root ginger peeled and finely grated
1 x salt and freshly ground black pepper
350 gm freshly cooked turkey cut into bitesized pieces
Instructions:
Instructions: Pour the coconut milk into a medium pan on the simmering plate and blend in the corn.

Pour soy sauce and hoisin sauce.

Bring up to the boil stirring and allow to thicken.

Stir in the water chestnuts the white part of the spring onions and the ginger. Season well then add the turkey and red pepper.

Return to simmering point then turn into a shallow ovenproof dish.

Slide onto the grid shelf on the floor of the roasting oven and bake for about 15 minutes until piping hot.

Remove from the oven sprinkle with the reserved green spring onion tops and serve immediately with basmati or red rice and salad.

A very different turkey recipe using leftover turkey from the chnstmas day roast.The turkey must be as fresh as possible.
