1. Place the mayonnaise, mustard, watercress, and lemon juice in a blender and puree until smooth (if too thick, add a little water). 2. Season with salt and pepper to taste. How to Prepare the Turkey Club: 1. For each sandwich, lay three slices of bread side by side. 2. Spread a layer of the mayonnaise and a small handful of mesclun on one slice of bread and top with a slice of tomato. 3. On the next slice, place the turkey, brie, and a fourth of the avocado slices.
