MAYONNAISE ----------------
1 cup Mayonnaise
1 tsp Dijon mustard
1 cup Watercress, stems removed
2 tbl Fresh lemon juice
Salt and pepper, to taste
----------------- SANDWICH ----------------
12 slc Black bread, 1/4 inch thick
Mesclun, or young lettuce
4 slc Ripe tomato
12 slc Roasted turkey breast
4 slc Brie cheese
1 x Haas avocado, peeled halved and thinly sliced
Instructions:
Instructions: How to Prepare the Mayonnaise:
1. Place the mayonnaise, mustard, watercress, and lemon juice in a blender and puree until smooth (if too thick, add a little water).

2. Season with salt and pepper to taste.

How to Prepare the Turkey Club:
1. For each sandwich, lay three slices of bread side by side.

2. Spread a layer of the mayonnaise and a small handful of mesclun on one slice of bread and top with a slice of tomato.

3. On the next slice, place the turkey, brie, and a fourth of the avocado slices. Stack the two slices of bread and top with the third.

4. Cut the sandwich in half on the diagonal.
