Instructions: Cut turkey into steaks about the size of a chicken breast.
Mix sausage mince and finely chopped macadamia nuts. Season with basil, pepper and salt. Cut a pocket into the sides of the turkey fillets and fill with sausage mince mixture. Lightly flour turkey fillets in seasoned flour then dip into egg wash (egg and milk combined). Coat with finely chopped macadamias. Fry the fillets in hot oil until golden brown then finish cooking the fillets in a medium oven 190C (350F) for 15 minutes. Drain off the excess fat from the frying pan, add the brandy and simmer to reduce it, then add the gravy mix. Simmer for a few minutes, then finish with cream. Pour sauce over filets and serve.
