Instructions: Preheat the oven to 400 degrees. In a greased medium-size roasting pan, mix the oil, potatoes, green peppers, and sliced onion. Sprinkle with 1/4 teaspoon of the salt and 1/8 teaspoon of the black pepper and bake, uncovered, for 20 minutes.
In a large bowl, beat the egg lightly. Add the turkey, bread crumbs, chopped onion, parsley, Worcestershire sauce, and remaining salt and pepper, and combine. Shape the mixture into an 8- by 5- by 3-inch loaf. Reduce the oven temperature to 350 degrees. Remove the roasting pan from the oven, add the zucchini, and mix well, then push the vegetables to the sides of the pan. Place the turkey loaf in the center and pour the tomato sauce over all. Return the pan to the oven and bake, uncovered, stirring the vegetables occasionally, until the turkey loaf is no longer pink on the inside and the vegetables are tender - about 35 minutes more.
